Faj-ritos

I made a combination of Fajitas and Burritos this past week and wanted to share the super easy recipe!

Faj-ritos
4 servings

1 pound round steak, sliced into strips &/or chunks
1 packet fajita seasoning mix
oil (1 turn of the pan)
1/2 c chopped sweet or spicy peppers
1/2 c chopped onion
2 cups homemade (or canned) refried beans
2 cups cooked Mexican or regular rice
2 cups shredded cheddar cheese
sour cream
salsa for topping
4 burrito tortillas

In a large pan, sauté the peppers and onion in the oil. Remove from pan. Brown the steak in the same pan. Follow the instructions on the seasoning packet to make sauce with the steak. Add peppers and onions back into the skillet, heat throughout.

Warm the tortillas in the microwave or oven. Place each tortilla on a separate plate so that you have room to work. Layer the ingredients in the following manner:

1. Spread 1/4 cup refried beans down the middle of the tortilla.
2. Divide the meat mixture among the tortillas.
3. Add 1/4 cup rice on top of each faj-rito
4. Sprinkle 1/4 cup cheese on each
5. Roll the tortillas up as well as possible and turn the seam-side down.
6. Spread sour cream on top of each tortilla, as desired
7. Spoon salsa over the top of that, as desired
8. Sprinkle cheese across the top of the Faj-ritos
9. Serve with remaining rice and beans.

Substitute chicken for steak, or substitute the meat for whole black beans to make it vegetarian.
